After the finca had various Andalusian owners, it later became the property of the high nobility of the capital. The later owners, the Verí family, managed the estate to the highest level of agricultural use. The focus was on viticulture, which is still practiced with great passion on Albocasse today. Aubocassa combines tradition with the latest technology
The Albocasser estate is located in the east of the Balearic island, in the municipality of Manacor. This very rural region of the island has been able to preserve the agricultural character of Mallorca to this day. Olive trees thrive on the chalky soils, which are composed of horizontal slabs and accumulations of nutrient-rich clay soil. Albocasser has an olive grove consisting of more than 7,600 trees. As soon as the olive turns from green to purple, it has to be removed from the tree.
Because a first-class olive oil can only be pressed from intact, healthy fruits, in Aubocassa

Therefore, harvesting with vibrating screens and motorized hand shakers is only done by qualified personnel. Immediately after picking, the olives are taken to the state-of-the-art oil mill. Without losing any time, the fruit is cleaned, weighed and gently chopped up. From this point on, the olive paste is always in a closed and cooled cycle, so that neither oxygen nor heat can destroy its valuable ingredients and wonderful aromas.
After separating the oil from the mass in a horizontal centrifuge and final purification in a vertical centrifuge, the pure olive oil is stored in large, conical stainless steel tanks. The tiniest floating particles and residual water settle on the bottom there, making mechanical filtering unnecessary.
