Aubocassa - incomparable olive oil from Mallorca

While party people appreciate Mallorca as a hotspot for an exuberant short break, gourmets love the Balearic island as the place of origin of an exquisite olive oil. Aubocassa, the manufacturer of the top oil, can look back on a long, traditional past. Even if in earlier centuries mainly viticulture was practiced on the Mallorcan estate, the traditional experience paired with great know-how can be tasted in every drop of the top-class extra virgin olive oil.

Aubocassa Mallorca olive oil

Aubocassa creates two top oils that are as popular with olive oil connoisseurs as they are with laypeople. Because all the wonderful scents of the herbs, bushes and trees that are in the olive grove can be found in the bouquet of the first-class olive oil. Both the single-variety Aubocassa Arbequina olive oil and the lovingly composed Coupage L'Amo inspire with a fresh, authentic and spicy taste. The yellow-green olive oils from Aubocassa are reminiscent of the Spanish sun, the enchanting nature of Mallorca and an ancient, unique culture.

The long tradition of Aubocassa

The Mallorcan estate of Aubocassa dates back to sometime between 902-1229 AD, when the Balearic island was under Andalusian rule. Although it subsequently changed hands several times, it has retained its Andalusian name. Albocàsser, the place name is borrowed from the word Albo-Kasi and can be translated as "son of Kasi".

After the finca had various Andalusian owners, it later became the property of the high nobility of the capital. The Renaissance chapel from that time has been preserved to this day and is popular with tourists interested in culture in Mallorca. Characteristic decorations and the family crest of the Despuig dynasty date back to this period.

The later owners, the Verí family, managed the estate to the highest level of agricultural use. The focus was on viticulture, which is still practiced with great passion on Albocasse today. Therefore, during a visit you can not only roam through the green olive groves, but also taste the extra virgin olive oil and the wine of the estate at a subsequent tasting.

In addition to viticulture, later owners of Albocasse ran cattle and sheep. They planted a vegetable garden for their own use and cultivated large fields of grain. The history of Albocasser also reflects the history of Mallorca. The small Renaissance chapel, a spectacular wine cellar and large stables bear witness to the traditional past to this day.

Aubocassa combines tradition with the latest technology

The Albocasser estate is located in the east of the Balearic island, in the municipality of Manacor. This very rural region of the island has been able to preserve the agricultural character of Mallorca to this day. Olive trees thrive on the chalky soils, which are composed of horizontal slabs and accumulations of nutrient-rich clay soil. Albocasser has an olive grove consisting of more than 7,600 trees. The main part is taken up by the small Arbequina olives, from which the fresh, fruity, single-variety Aubocassa Arbequina olive oil is pressed. The equally delicious, slightly spicy Coupage L'Amo is composed of Arbequina olives and Picual olives.

In order to harvest the fruit at the right degree of ripeness, the olive growers of Aubocassa, under the direction of the current owner Mario Rotllant Solá, inspect the plants very carefully, according to tradition handed down. Because in order to obtain an appropriate yield and at the same time the high-class quality of the olive oil, the fruits have to be harvested when the color changes. As soon as the olive turns from green to purple, it has to be removed from the tree.

Because a first-class olive oil can only be pressed from intact, healthy fruits, in Aubocassa

  1. the olives do not fall on the ground during harvest.
  2. No fruit that has already fallen is picked up from the ground.

Therefore, harvesting with vibrating screens and motorized hand shakers is only done by qualified personnel. Immediately after picking, the olives are taken to the state-of-the-art oil mill. Without losing any time, the fruit is cleaned, weighed and gently chopped up. From this point on, the olive paste is always in a closed and cooled cycle, so that neither oxygen nor heat can destroy its valuable ingredients and wonderful aromas.

After separating the oil from the mass in a horizontal centrifuge and final purification in a vertical centrifuge, the pure olive oil is stored in large, conical stainless steel tanks. The tiniest floating particles and residual water settle on the bottom there, making mechanical filtering unnecessary. Within just two hours, the high-quality, exquisite olive oil is produced at Aubocassa in an innovative and at the same time gentle way.
