    Olive oil blend or an olive oil coupage

    As with wine, coffee or tobacco, the designations "blend", "Coupage" or "Assemblage" always mean, that it is a mixture. Depending on the starting product, different types of grapes are fermented together, different coffee beans are ground together or various types of tobacco are blended. The end result can be of better or worse quality.

    Because 24 different types of olives are used to press olive oil in Spain alone, olive oils can also be found here that are not only made from one type of olive, but from at least two different types. Neither the designation "blend" nor the name "coupage" is protected. They can therefore be used both for an olive oil that is the result of chance during the grinding of the different types of olives and for an olive oil blend that has been carefully mixed with great care and after careful prior tasting.

    How is an olive oil blend made?

    And that brings us to the big difference:

    In large cooperatives, often made up of many small olive growers who transport all their olives to a single oil mill, it is still common today to press all the fruit delivered together. This approach has a number of advantages:

    • The olives do not lie around for long before processing, but can usually be cleaned and ground immediately.
    • This means that the risk of oxidation is very low, aromas and healthy ingredients are retained - depending on the processing method.
    • Coordination of the individual suppliers is not necessary, because as the saying goes: "First come, first served".
    • The oil mill is always in operation during the entire harvest season and can therefore work effectively.
    • Of course, all this also results in a moderate olive oil price.

    Disadvantages of the olive oil coupage, in which different varieties are ground and pressed together:

    • Each resulting olive oil blend is a random product.
    • Neither the taste nor the quality can be predicted.
    • During the high season, this method can also lead to olive jams in front of the oil mill, so that the immediate processing of the fruit is no longer guaranteed.
    • Oil mill workers sometimes have to work day and night to keep up with the flood of olives in a timely manner.
    • This can lead, among other things, to reduced care and quality.

    In a second variant, which also leads to an olive oil blend, the different types of olives are not pressed together, but the single-variety olive oils are specifically mixed. This means that the fruits are sorted according to type before grinding and only the finished oils are mixed. This variant of the coupage also has advantages and disadvantages. The disadvantages of the method can be defined as follows:

    • An exact agreement with the olive growers is necessary so that the olives do not have to be sorted first in the mill.
    • The olive growers cannot harvest their trees indiscriminately, but have to separate the fruit from the tree by variety.
    • The extra work of sorting that either the farmers or the olive processors have to do translates into a higher price of the finished olive oil blend.
    • It also takes a lot of finesse and expert tasting to get the end result you want.

    But despite the disadvantages listed, which are mainly expressed in extra work and specialist knowledge, a high-quality olive oil coupage is worth all the effort because it also has many plus points:

    Actually, there are exactly two main reasons that lead olive oil producers to produce an olive oil blend:

    • You want to optimize the quality of the olive oil.
    • You want to improve the taste of the oil.

    Both can only be achieved if single-variety olive oils are mixed with each other in a specific ratio.

    • Olive oils made from olive varieties that are more prone to oxidation can be blended with other more stable varieties to create an olive oil blend that is hard to beat for healthy ingredients.
    • Oils that have a high degree of bitterness or spiciness can be refined by adding milder olive oils, resulting in a harmonious, pleasant coupage.
    • Both the quality of the ingredients and an attractive taste experience can be kept the same for years through a precisely predetermined composition of the finished olive oil blend. Consumers can adapt to the taste of their favorite oil.
