This fine vinegar is produced using the traditional Orléans method , a slow fermentation method that gives the vinegar its outstanding quality. The concentrated must is then gently reduced in small batches and matured for years in French oak barrels (Allier, Tronçais, Bertrange). This complex process gives the vinegar its velvety texture and its harmonious interplay of sweetness and acidity.
