The story of this vinegar began in 2007, when the winery decided to continue processing its high-quality wine instead of discarding it. It is produced using the traditional Orléans method , a slow fermentation process that cultivates the acetic acid bacteria naturally. The vinegar is then aged for 36 months in four-year-old French oak barrels, which allows it to develop its complex aromas.
